Pelau

I chose to write about Pelau because my aunts are planning a bus trip to Six Flags this summer and when they have the bus rides they serve food and the meal that is served on the way home is usually Pelau, which consists of rice, meat (preferred chicken) and pigeon peas, at least those are the main ingredients. Also served with a salad on the side and a cold drink. Now not everyone can make Pelau well but once you taste the right one, you fall in love.

I Think I had enough

It is possible to be tired of food isn't it?  Well I am one who enjoys food but the same thing almost every night makes you tired of it an maybe even not want it ever again.  My Dad is here in New York visiting from Trinidad and he believes he is the best cook and he likes the cook the same things over, and over, and over.  His favorite thing to cook, which seems like he cooks it every other day is Stew beef and rice.  Don't get me wrong I enjoy stew beef and it is easier to make than stew chicken <---(a previous blog) but it seem like he cooks it every other day.  Is it possible to get tired of your favorite food?

Saltfish (Buljol)

So this weekend my family had to come together for an unfortunate event and with all the stress and stuff there wasn't much time to prepare food so a quick an easy meal is.....BULJOL........ is From the French patois, "Brûlê Gueule," or "burn mouth," a mixture of shredded, de-salted codfish, oil, onion, tomatoes, black, hot and/or sweet peppers, etc. Apparently the original recipe called for really hot peppers -- hence the name "burn mouth."-- From Cote Ci, Cote La: Trinidad & Tobago Dictionary, by John Mendes, © 1986. Roti


Trinidad is a land of diverse cultures. Roti come from the East Indian people and is a favorite once the right person makes it. Consists of a flour bread with ingredients inside could be some form of meat curried, or vegetables, channa, potato and maybe some pepper sauce


Im gettin hungry thinkin about it and no i don't know how to make it I just know how to eat it. You also have to know that you eat it with your hands.

Bake & Shark


Shark, yes shark fried, then there is the Bake which is made of flour, baking powder, a pinch of salt and oil for frying.......Nothing much is to be said about this because you just have to taste it, it is great.
You can find the best Bake & Shark (in my opinion) at Maracus Bay beach, on the north coast of Trinidad.

Child-hood favorite

LOVE LOVE LOVE cheese paste sandwiches. Now anyone that know me, knows I love sandwiches. Cheese paste sandwich consists of grated cheese, mixed with mayo and maybe even a little hot sauce (optional). Mix the cheese with the mayo and then spread it between two slices of bread, and you good to go. Its good for parties (finger food). But somehow there are only a few child hood friends from Trinidad that like, other people get freaked out. It is such an easy snack, and yummy too.

DRINKS


Being from the Caribbean there are similarities when it comes to making different meals and even drinks. Like I know in Trinidad we have Sorrel which are red flower buds and of course you make a drinks out of it after boiling it and adding some sugar. But to my understanding I believe Jamaicans make that same drink but they mix it with Ginger beer. Here is a recipe for Sorrel that is not my own I got from a family member.
Red Sorrel Punch
2 quarts sorrel fruit (pods plus calyces)
3 quarts boiling water
3 pounds granulated sugar (or to taste)
12 cloves
Remove seeds from the fruit by cutting off the bases with a small, sharp knife and scraping the seeds out with a small spoon. Place the fruit in a large, clean jar or noncorrosive pot with the cloves. Pour in boiling water. Cover the container with a tea towel, and let the mixture steep for 24 hours. Then strain it and sweeten to taste. Keep refrigerated.

I also have a recipe for Trinidadian Rum punch, this one is for the alcohol drinkers out there....this is also a good one, great for those little parties to get people comfortable ;)
75 cl Dark Rum
40 cl
Lemon Juice
500 g
Sugar
1 liter
Water
1 tsp
Angostura Bitters

Black (blood) Pudding

Now when you see pudding, you probably thinking about Bill Cosby chocolate pudding commercials. Well black pudding is nothing like that. Black or sometimes called blood pudding is exactly that.....BLOOD. Usually eaten at breakfast, pigs,beef or even chicken blood is used to make this meal. It is usually frozen and once cooked it like a big piece of meat.

It is prepared and seasoned with a variety of spices and seasons and cooked in a frying pan.

I personally have never had it but I have seen my dad, aunts, uncles an even a cousin enjoy it with bread and a cup of tea as a breakfast meal. They say its really good. I have also read articles where there were health risks by consuming this but I haven't heard or seen anyone get sick.

One of my favorite things to make and probably the easiest is stew chicken. I must say I love chicken :) So I decided to share my recipe with you......enjoy


Stew Chicken

1 chicken (cut -up) with bones (cause it just taste better and wouldn't be as dry as bone-less).
(chive,onion,parsley,celery,garlic,salt, pepper)

**or simply for the trini people who know bout de green seasoning, and u good to go** {Can be found in vegetable/fruit store or west indian grocery}

lime juice,
a little brown sugar
oil for frying
brown sugar ( 2 tablesps ) for browning
coconut cream ( optional )

Method:

1) Season chicken with mentioned ingredients and marinate over night or for a few hours before cooking

2)Pre heat heavy iron pot (cause yuh mus have de iron pot) put about 2 tablespoons of oil and the brown sugar and let the sugar get dark brown. (make sure it does not burn).

3) Add chicken pieces to pot, stir for a few moments so that the sugar touches all the pieces, then let sit for a few minutes.

4) Add a little water and stew chicken until tender and brown ( about one hour ).

**MAKE SURE TO KEEP YOUR EYES ON YOUR POT**

Trini Cooking


I enjoy cooking because I cook to survive. I love food so from young I always paid attention to family members who knew how to cook an pick up different ideas and make them my own. From since I was around the age of 12 I have been in the kitchen. I first learned how to boil rice (believe it not, not everyone can do that). Trini cooking to me is easier because it is my background and culture. I don't mind learning new things or just simply cooking a new dish. Its fun. One should learn to cook if they don't know how to because its fun.
